Bean Sprout - Bhel


Ingredients:  

Sprouted whole moong ---1 cup

Any farsan/ chiwda -----1 cup (preferably Sweet kind like Laxmi Narayan )

Finely chopped green onions or red/white chopped onion—1/2 cup

Tomato seeds removed and chopped—1/2 cup

Cilantro chopped ---1/4 cup

Tamarind and date chutney- 2 tbs (see recipe below)

Chopped cilantro for garnish

Pudina/ mint chutney –2 tbs (see recipe below)


Method:  In a medium saucepan add 4 cups water. Bring to boil, add a pinch of salt and turmeric powder. Add sprouted moong to the boiling water. Boil for one minute and turn off the heat. Let it stand for a minute and drain the water. Do not rinse under cold water. 

Now mix all the ingredients in a salad bowl and mix. Serve immediately


Date-Tamarind Chutney: Take one cup chopped dates and soak it in warm water for 4 hours, if you want to make it instant, microwave for five minutes, add about ½ cup shredded jaggery / sugar/ brown sugar , a teaspoon of coriander –cumin powder and 1/4 cup tamarind extract, if using concentrate use two tablespoons. Puree all ingredients in a blender to make a smooth and soft chutney.


Mint chutney: Take ½ cup chopped mint leaves, a few sprigs of fresh coriander, ¼ cup chopped green onion stalks, 2-3 green Serrano chili,   lime juice to taste and salt. Puree in a blender to make a soft smooth chutney
